soy milk will curdle with nigari -- what results is known as TOFU -- here is your substitute for paneer -- be warned, though, that you will never get a real "sandesh" taste as with milk. Other "milks" you have mentioned almond, hemp, oat ..etc will NOT break into curds and whey.

If you watch manjula didi's videos you would know by now that she presents only vegetarian recipes SANS -- eggs, garlic and onions -- this is akin to her belief and value systems and I for one am sure glad that she posts these valuable videos.

My husband and i love it. just like it grandsma, use do, its when the milk was from the fresh caw. 10 cnts a gallon . back to the 1970.i enjoy.peace be with you.
